Because of the war in Ukraine, we would like to take in an au pair from there. Is that possible?

Your intention to take in a young person from a crisis region such as the Ukraine at present is of course an honour. Therefore, the sobering realisation that there is hardly any possibility of this is certainly difficult to accept.

Refugees from crisis or war zones can apply for asylum in Germany.
The residence permit issued as a result does not initially entitle the person to take up work - not even as an au pair.
If a work permit is later issued, the people concerned will certainly want to do other jobs than being an au pair.

A regular au pair visa process would of course be an option. However, the foreign representations in countries threatened by war usually do not. closed, so that no visa applications of any kind are processed.

In your own interest, also consider any war trauma your intended au pair may have suffered and remember that war refugees in particular are faced with completely different problems than finding a job as an au pair.
